It isn't so much a matter of "hiding" the info as it is of "not giving" the
info.
Dotster.com and in fact almost everyone except NSI, doesn't require that you
give any more than you want to.
For that matter, you can make up information if you want.
It doesn't actually register and hide it. It just never adds it to the
registration entry (from your master record).

privacy also depends on who your registrar is... i've found that i've been
able to hide most of my information with domains i have regged with
dotster.com.  they let you manage your info and you can leave things out by
putting a dash or an underscore in the information fields. this way only my
business phone and the country i live in shows.  but my domain that's listed
with network solutions has all my info and doesn't allow me to hide any of
it.  which is why i used a studio address and not our home address when i
registered there - so luckily i don't really need to hide anything.

and then check katgyrl.com to see the difference the between registrars
letting me control my info.
